Gluten Free Pancakes

Ingredients :

  • 250g of amaranth flour or rice flour

  • 300ml of water or coconut milk

  • 2 eggs

  • 1 table spoon of coconut sugar (optional)

  • Vanilla powder or few drops of vanilla extract

  • one mashed banana (optional)

  • 1 table spoon of grounded flax seeds

  • For extra protein you can add a scoop of neutral or vanilla protein powder. I use the sun warrior vegan protein powder.

Steps :

  1. Add 250g of flour and sugar in a mixing bowl

  2. Add the eggs and a bit of the coconut milk or water, and start to mix from the center incorporating the flour slowly

  3. Add the vanilla and the rest of the milk or water and make sure to mix well until there are no more chunks

  4. Add the mashed banana

  5. Put a bit of coconut oil in a pan, and spread it out with a kitchen paper to remove the excess oil.

  6. Make 2 pancakes at a time, letting each side cook well

  7. Serve immediately or store in the fridge for later
