Rainbow Salad

Ingredients :

  • Green leaves such as spinach, Kale or other dark green leaves

  • 100g of mungo sprouts

  • 100g of cashew (soak them in water for 2hours minimum)

  • 1 fresh and ripe mango

  • 50g of goji berries

  • 1 bouquet of fresh coriander

  • 1 tbs of honey

  • 3 tbs of Tamari or soja sauce

  • 2 tbs of rice vinegar

  • 1 lime juice

  • fresh pimento

Steps

  1. Soak the Goji Berries in hot water ideally for an hour so that they are not so hard.

  2. Add cashew nuts in a pan with honey on low heat so that the cashew caramelize slowly. When they are brownish they are done! Make sure to stir so that they don’t burn.

  3. Cut mango in dices and chop the coriander

  4. Add all ingredients in a salad bowl

  5. For the sauce add the tamari, the rice vinegar, the lime juice and chop the ginger and pimento in tiny pieces.

  6. Add the sauce in the bowl and mix well then leave for 5 to 10 minutes out so that the flavors mix!

    Note : This Salad is ideal to accompany a protein such as eggs or chicken or for a vegetarian meal you can add some beans to complete it!
